Madeira wine for chocoholics

Madeira wine, especially Malmsey or as it is often known Malvasia works exceptionally well with Chocolate based dishes….chocoholics take note and here are some produced by Madeira’s expert chefs and sponsored by IVBAM.

The chocoholic will delight in finding a wine that will add immeasurably to any chocolate led dessert and not just a sweet Madeira or Malmsey/Malvasia, but a Boal or a Terrantez can pair with chocolate desserts very well indeed.

if you wish to replicate these dishes click on the IVBAM listing link who have curated these wonderful recipes working with Madeira’s leading chefs.

Crunchy praline and hazelnut brownies with Chocolate parfait and Grand Marnier Ice cream

Hazelnut brownies and crunchy praline

Hazelnut brownies and crunchy praline served with D’Oliveira Colheita Terrantez 1988 – Meio Seco (medium-dry)

This interesting desert is recommended to be accompanied by one of the rarer Madeira wines, Terrantez which is an interesting and innovative choice as Terrantez is at the drier end of the Madeira wine spectrum. Intriguing and one for the real Madeira wine connoisseur. I suspect a Verdelho will work with this dish as well.

Choclate Moelleux

Chocolate moelleux

Chocolate moelleux served with H. M. Borges Malvasia, 40 Years “500 Years of Funchal”

So, OK this is with a doubtlessly fabulous 40 year old Malvasia from HM Borges, but I am sure a younger Malvasia will work with this as well.

Chocolate Trilogy

Chocolate trilogy

Chocolate trilogy served with Cossart and Gordon Colheita Bual 1997

So, just to confound this delight is served with a Boal, a Bual of some age, but likely to be a little drier than a Malmsey.

Chocolate lollipop and Passion Fruit Ganache

Chocolate lollipop and passion fruit ganache with 10 year old balsamic vinegar and olive oil served with 10 Year Old Malmsey or Sweet Madeira Wine

This is an intriguing confection, with s series of flavours relying on a 10 year old Malmsey to pull it all together. Passion fruit is a delight in Madeira and is often served as a dessert in many restaurants and Malmsey woks well with passion fruit.
