Madeira wine for chocoholics

Madeira wine, especially Malmsey or as it is often known Malvasia works exceptionally well with Chocolate based dishes….chocoholics take note and here are some produced by Madeira’s expert chefs and sponsored by IVBAM.

The chocoholic will delight in finding a wine that will add immeasurably to any chocolate led dessert and not just a sweet Madeira or Malmsey/Malvasia, but a Boal or a Terrantez can pair with chocolate desserts very well indeed.

This interesting desert is recommended to be accompanied by one of the rarer Madeira wines, Terrantez which is an interesting and innovative choice as Terrantez is at the drier end of the Madeira wine spectrum. Intriguing and one for the real Madeira wine connoisseur. I suspect a Verdelho will work with this dish as well.

So, OK this is with a doubtlessly fabulous 40 year old Malvasia from HM Borges, but I am sure a younger Malvasia will work with this as well.

So, just to confound this delight is served with a Boal, a Bual of some age, but likely to be a little drier than a Malmsey.

This is an intriguing confection, with s series of flavours relying on a 10 year old Malmsey to pull it all together. Passion fruit is a delight in Madeira and is often served as a dessert in many restaurants and Malmsey woks well with passion fruit.
